Sweet Potato Jack-o’-Lanterns

A little carving, a little roasting, and a whole lot of fun! These Sweet Potato Jack o’ Lanterns are crispy on the outside, soft and buttery within, and finished with a luxurious touch of Black Truffle Oil and Black Truffle Salt. Simple, elegant, and just the right amount of spooky — a perfect Halloween appetiser or side for your festive table.

INGREDIENTS:
- 2 large orange sweet potatoes
- 2 tbsp Kiwi Artisan Black Truffle Oil
- ½ tsp Kiwi Artisan Black Truffle Salt or Truffle Seasoning
- Fresh chives, finely chopped (for garnish)
METHOD:
- Preheat the oven to 200°C.
- Slice the sweet potatoes into 2cm-thick rounds. Using a small knife or cookie cutter, carefully carve out little Jack o’ Lantern faces.
- Brush both sides generously with Kiwi Artisan Black Truffle Oil and sprinkle with Black Truffle Salt.
- Place on a lined baking tray and roast for 25–30 minutes, or until golden and tender.
- Arrange on a platter and finish with an extra drizzle of Truffle Oil and a sprinkle of fresh chives.
👻 Spooky Tip: Arrange them on a dark serving platter to make the orange pop under candlelight!
