Sweet Potato Jack-o’-Lanterns

 

A little carving, a little roasting, and a whole lot of fun! These Sweet Potato Jack o’ Lanterns are crispy on the outside, soft and buttery within, and finished with a luxurious touch of Black Truffle Oil and Black Truffle Salt. Simple, elegant, and just the right amount of spooky — a perfect Halloween appetiser or side for your festive table.

INGREDIENTS:

 

METHOD:

  1. Preheat the oven to 200°C.
  2. Slice the sweet potatoes into 2cm-thick rounds. Using a small knife or cookie cutter, carefully carve out little Jack o’ Lantern faces.
  3. Brush both sides generously with Kiwi Artisan Black Truffle Oil and sprinkle with Black Truffle Salt.
  4. Place on a lined baking tray and roast for 25–30 minutes, or until golden and tender.
  5. Arrange on a platter and finish with an extra drizzle of Truffle Oil and a sprinkle of fresh chives.

 

👻 Spooky Tip: Arrange them on a dark serving platter to make the orange pop under candlelight!
