Olive and Pistachio Crusted Salmon

Ingredients

  1. 2 salmon fillets
  2. 1/4 cup green olives, pitted and finely chopped
  3. 1/4 cup pistachios, shelled and chopped
  4. 2 tbsp breadcrumbs (preferably panko for extra crunch)
  5. 1 tbsp olive oil
  6. 1 tbsp lemon juice
  7. 1/2 tsp garlic powder
  8. Salt and pepper to taste
  9. Fresh dill (for garnish, optional)

Instructions

  1. Prep the Crust:
  2. In a bowl, mix the chopped green olives, pistachios, breadcrumbs, garlic powder, and a pinch of salt and pepper. Set aside.
  3. Season the Salmon: Pat the salmon fillets dry with paper towels. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  4. Crust the Salmon: Press the olive and pistachio mixture onto the top of each salmon fillet, coating them evenly.
  5. Cook the Salmon: Heat a non-stick skillet over medium-high heat. Place the salmon fillets in the skillet, crust-side down, and cook for 4-5 minutes. Flip the fillets and cook for another 4-5 minutes, or until the salmon is cooked through and the crust is golden brown.
  6. Serve: Garnish with fresh dill and serve with a side of roasted vegetables or a simple salad.
